What's the science/mechanics of lamps that you touch with flesh of finger, nails don't work.?

It is called a capacitance switch.

Basically a capacitor is like a reservoir for electrons. The circuit is set up so that it changes state when the reservoir falls below a critical level. When you touch a conductor that is attached to the capacitor your body sucks all of the electrons out of the capacitor and causes the switch to change state.
